What our household will be having for dinner tomorrow night...

As you will soon learn, I have this obsession for Pinterest that is beyond words. It didn't start out like that though, in the beginning I just figured it was going to be another Fad, not that I don't have Facebook or didn't have a Myspace, But as we are all figuring out websites trend for a few years and they die off. It feels like ages since I was in middle & high school and every free second I had being on the computer, talking to my friends from different schools like I hadn't seen them in forever, when I had just seen them 30 minutes ago at Dance or cheer leading practice.
Now back to what I am really posting about...
I just found the most delicious looking recipe I have seen in a while, and I haven't seen anything like it anywhere on Pinterest. So for the recipe:

Roasted Vegetable Salad Wreath
Salad
1 large zucchini, (about 8 oz.)
2 small yellow squash, (about 8 oz.)
2 tablespoons olive oil, divided
1 teaspoon salt, divided
1 teaspoon ground black pepper, divided
4 small carrots (about 8 oz.)
1 small red onion, peeled and cut into quarters
½ teaspoon granulated sugar
3-4 small fresh beets, peeled
Dressing
¼ cup fresh basil leaves, lightly packed
3 tablespoons olive oil
1 tablespoon lemon juice
1 tablespoon white wine vinegar
1 teaspoon Dijon mustard
½ teaspoon granulated sugar
½ teaspoon salt
¼ teaspoon ground black pepper
1. Preheat oven to 500ºF. Fit food processor with multipurpose slicing blade. Using thinnest setting,
slice zucchini and yellow squash. Remove to mixing bowl, toss squash with 1 tablespoon olive oil,
½ teaspoon salt and ½ teaspoon black pepper until evenly coated. Spread slices in a thin layer onto large
baking sheet. Roast 15-18 minutes or until beginning to brown on bottom. Remove; set aside.
2. Meanwhile slice carrots and red onion using thinnest setting. Remove to mixing bowl, toss with 1 teaspoon
olive oil, ½ teaspoon sugar, ¼ teaspoon salt and ¼ teaspoon black pepper. Arrange over one half side of
large baking sheet. Slice beets using thinnest setting; toss with remaining oil, salt and black pepper. Arrange
beets on other half of same baking sheet with carrots and onions. Roast 12-15 minutes or until beginning to
brown on bottom. Remove.
3. For dressing, fit processor with mini-bowl and mini multipurpose blade. Add basil, olive oil, lemon juice,
vinegar, Dijon mustard, sugar, salt and black pepper. PULSE until basil is finely chopped.
4. Combine all roasted vegetables on one of the baking sheets. Drizzle evenly with dressing. Toss gently;
arrange on serving platter in wreath shape, about 12 inches in diameter. Serve at room temperature or
slightly chilled.
Makes 6 servings

So sleepy this morning.

I don't know about anyone else, but this morning after the kids go to school I will be taking a power nap. I'm going to get on my little soap box this morning and rant about something that I had a dream about in the few hours I did sleep last night. When you are pregnant it is so annoying to hear, "you better be getting your rest before the baby gets here...":
A) who doesn't know that...
B) they did it when I was pregnant with Ben, like I didn't know already with an 18 month old at home &
C) I don't know about everyone else but, when i'm pregnant, no one had to inform me of that because that was one of my favorite things.
Wondering why I wrote this as soon as I woke up... Because I fell asleep finally at 4 am. And alarms started going off at 6:52am for school. I do believe I get less sleep than ever now that they are in school. Lol...now i'm going to step down off my soap box and get the kids to school....everyone have a great day...who knows I may be back today (especially since we maybe having some big news...and no i'm not pregnant again...lol)...so tt4n. @@@|}:°)

Birthday party and sick baby in the house

So this past few days in our household, has been a little crazy. Over the past weekend up to now, we have had so much go on which is why I haven't posted like I want to. However, that doesn't mean that there hasn't been anything go on...lol. I have hosted Ben's 7th birthday party, had a sick child at home, and now the brother in law is sick...what more is this household going to put me through. I swear there is so much testosterone in this house it makes me want to scream sometimes. But, hey  they are my family, and I love them very much. Ben's birthday party went great, however we had a little oops! the day of the party. I had been working on some of the decorations and told my husband that we were going to need to be at the gym at a certain time to put everything together. So when he called my Dad to go and get the bounce house (which was the biggest thing at his party) and realized that no one had picked it up from the event rental place, needless to say I totally freaked. Mainly because the company was closed on Sunday, paid for, and no where within 45 minutes that I knew of that had one. My dad thought they were delivering it, my husband thought my dad had gotten it and I of course had reminded everyone on Friday AND Saturday  to make sure it was picked up...But did anyone make ANY phone calls...NO. But thank goodness my super husband came to the rescue, called the company and got the owners emergency line. The owner was about 30 minutes away, but that was okay because we had a few more hours. Long story short though make sure that everyone is aware of what is supposed to be done and when because, things happen. We ended up getting the bounce house, and all the kids had a blast.  The cake which was made by my sister (who is amazing by the way, if you want cakes and live in NC then you need to like her page...How Sweet It Is The profile picture is mine and my husband's wedding cake which was absolutely delicious.) Anyways of course not only one thing can go wrong...so when the three tiered cake was being delivered via my mom, the top half of the bottom layer decided that it wanted to slide about 3 inches...And if you were wondering IT WAS DELICIOUS...funny to think about now, But stressful then. I asked Ben after his party if he had fun, and he made me feel so much better by saying that it was the best birthday ever! I will post pics later when I get them onto my computer!
Zach got sick closer to the end of the party and wanted to go home, and has been sick since. Must be something viral but either way, I still go on a sanitizing spree whenever there is sick germs in my house....Haha ...Then woke up and my brother-in-law has it...So onto day 2 of de-germing the house and Dr visits...

One proud mama tonight...

Tonight, while I was working on Ben's birthday party decorations, my husband came home with a newspaper in hand.  Now, we normally don't purchase one unless I am  couponing...but I figured hey whatever...
So as I am flipping through the paper to catch up on our small town life, I came to a picture that caught my eye, some kids that looked familiar...when I looked closer, I saw my Zachary, with his teacher and class for winning the attendance award for the first month of school...
Just wanted to give a shout out to them because, I am so very proud!!! Congratulations guys!!!


Not sure how this works...but giving it a try!

So I have been contemplating starting a Blog for quite sometime, Not because I think that anyone will be interested in reading about my life, But just because, I want to document the hilarious stuff that happens in my busy, one hundred mile an hour, everyday life.

So first let me tell you a little bit about my family.

I have a wonderful husband, whom I adore and love so much, but still can work my nerves when he wants to(But what man can't?). We have been married for a little over a year, and it has been the best time of my life and I can't wait to make it fifty.

I also have two boys who are seven and eight. Which is probably why I feel like I run 100 MPH all the time. They are so close in age that sometimes I forget that they are in fact, NOT twins...Lol...Sometimes they do have to remind me of this, Especially when we are shopping for school clothes and everything I pick up, I go ahead and pick up two of each, and they are "too old to dress alike, babies do that".

The oldest is really into sports, so all year we are constantly going to something whether its football, basketball, or spring or summer baseball. Some people may think that that is too much, But I feel like the more involved a child is growing up, the more they will stay on the right path. Now even though I treat them as if they are twins, they are two completly different children.

My youngest is more of the redneck type, who is getting ready to starty cub scouts, and loves to be outside, can not wait till he gets to go to middle school and get to be on the shooting team.

My brother-in-law also lives with us and I count him as one of my children too, even though he is almost 18 and I am getting ready to turn 26, which is utterly impossible.

 I love my little family so much and could not imagine what life would be like without them. Our house may never be quiet, but I love it that way. Because in twenty years my kids may not remember every single detail about their childhood, but they will remember how much love and support they have in their lives and that that we were a close knit family. Which is the one thing that I want them to pass down to their families.
